Have you ever cooked chicken with a yogurt coating? If not, you're missing out on some incredibly juicy and tender chicken. The recipe we're sharing below uses a yogurt coating on the chicken and I'm sure once you try it...you'll be in love!
Lemon Pepper Yogurt Chicken
Ingredients:
4 boneless skinless chicken breasts
8oz. plain, fat free yogurt (Greek or regular both work)
1 lemon grated for zest and juiced
1 Tablespoon olive oil
2 cups panko bread crumbs
1 teaspoon garlic, minced (about 1 clove)
1 teaspoon black pepper
1 teaspoon dried parsley
1 Tablespoon lemon pepper seasoning
Directions:
Pound the chicken breasts to about 1/2" thickness. Place in a gallon sized re-sealable bag. Place olive oil, garlic, black pepper, zest and juice of lemon in bag with chicken. Shake to coat and distribute over chicken. Refrigerate for at least two hours.
Place yogurt in shallow bowl or plate. Place bread crumbs, parsley and lemon pepper seasoning into another shallow bowl or plate and mix until bread crumbs and seasonings are evenly combined. Remove chicken from re-sealable bag and coat in yogurt on both sides followed by bread crumbs. Make sure chicken breasts are thoroughly coated, but not heavily as this will impact cooking times.
There are two ways to cook this chicken. Both come out equally delicious. Pick which one appeals to you the most.
Oven Method:
Preheat oven to 350 degrees. Place chicken breasts into a 9x13 baking dish. Bake for 45 minutes to 1 hour or until chicken juices run clear and no pink remains. Let rest covered with foil for 5 - 10 minutes before serving.
Skillet Method:
Using a non-stick frying pan, place chicken into pan and cook on medium high for about 5 - 10 minutes on each side until coating is crisp and browned and no pink remains in the chicken. If you do not have a non-stick pan, you can use a regular frying pan coated with oil or butter. You may need to flip the chicken more frequently so the coating does not stick to the pan.
Serve with rice and salad for a delicious meal.
