Delicious Lemon Pepper Yogurt Chicken

This week on Facebook at +Make Your Own , we're talking all about yogurt! We're sharing recipes, tips and tricks for making your own yogurt and even beauty tips using homemade yogurt!

Have you ever cooked chicken with a yogurt coating? If not, you're missing out on some incredibly juicy and tender chicken. The recipe we're sharing below uses a yogurt coating on the chicken and I'm sure once you try it...you'll be in love!



Lemon Pepper Yogurt Chicken

Ingredients:
4 boneless skinless chicken breasts
8oz. plain, fat free yogurt (Greek or regular both work)
1 lemon grated for zest and juiced
1 Tablespoon olive oil
2 cups panko bread crumbs
1 teaspoon garlic, minced (about 1 clove)
1 teaspoon black pepper
1 teaspoon dried parsley
1 Tablespoon lemon pepper seasoning

Directions:
Pound the chicken breasts to about 1/2" thickness. Place in a gallon sized re-sealable bag. Place olive oil, garlic, black pepper, zest and juice of lemon in bag with chicken. Shake to coat and distribute over chicken. Refrigerate for at least two hours.

Place yogurt in shallow bowl or plate. Place bread crumbs, parsley and lemon pepper seasoning into another shallow bowl or plate and mix until bread crumbs and seasonings are evenly combined. Remove chicken from re-sealable bag and coat in yogurt on both sides followed by bread crumbs. Make sure chicken breasts are thoroughly coated, but not heavily as this will impact cooking times.

There are two ways to cook this chicken. Both come out equally delicious. Pick which one appeals to you the most.

Oven Method:
Preheat oven to 350 degrees. Place chicken breasts into a 9x13 baking dish. Bake for 45 minutes to 1 hour or until chicken juices run clear and no pink remains. Let rest covered with foil for 5 - 10 minutes before serving.

Skillet Method:
Using a non-stick frying pan, place chicken into pan and cook on medium high for about 5 - 10 minutes on each side until coating is crisp and browned and no pink remains in the chicken. If you do not have a non-stick pan, you can use a regular frying pan coated with oil or butter. You may need to flip the chicken more frequently so the coating does not stick to the pan.

Serve with rice and salad for a delicious meal.

Homemade Apple Butter

This week over on Facebook, we're sharing recipes and information all about seasonings, spices and herbs! Have you been following along? We have a great Pinterest board going too! Go check them out!

Today, we're going to share a recipe with you for Homemade Apple Butter, which utilizes Allspice. You can find Allspice for a great price right here.

Allspice

Apple Butter

Ingredients
2 cups natural, unsweetened applesauce
1/2 cup sugar (you can use any type of sweetener that you like here, depending on what you're using, your substitution ratio will vary.)
1 teaspoon cinnamon
1/2 teaspoon allspice
1/8 teaspoon cloves
1/8 teaspoon nutmeg

Directions 
Combine all ingredients in a small saucepan over high heat and bring to a boil. Once a rapid boil has been reached, reduce heat and simmer on low for one hour. After one hour, remove from heat and allow to cool before storing in an airtight container in the refrigerator.

Apple butter is used as a spread on breads, muffins, cakes, cookies and sandwiches.

French Herb Butter

Are you following along with us on Facebook this week? We're discussing everything Seasonings, Spices and Herbs! We even created a board on Pinterest to share recipes, tips and histories of different seasonings, spices and herbs!

There's nothing better than filling your house with the delicious scents of herbs and seasonings while cooking! Both fresh and dried herbs and seasonings provide a very aromatic experience!

Today, we're sharing a recipe for French Herb butter. French Herb Blend, which is also referred to as Herbs de Provence, is a great staple to have in your refrigerator for baguettes or bread as well as cooking chicken or beef. It's a delicious addition to mashed potatoes too.

French Herb Blend

French Herb Butter

Ingredients
-1 stick of unsalted butter, softened at room temperature
-2 Tablespoons French Herb Blend (you can find French Herb Blend here)

Directions
Place softened butter and herbs into a mixing bowl. Using a spatula or large spoon, mix herbs into the butter until well blended. If you prefer a whipped texture, you can use a hand mixer to incorporate the herbs into the butter. Mix until blended.

Place your butter mixture into an airtight container and seal tightly. Refrigerate until firm. Use on sliced bread, to flavor and cook chicken and beef, or use in mashed or baked potatoes.

Did you know...one way to bring about the aromatic properties of dried seasonings and herbs is to rub them together in your hands before putting them into your dish. Rub between your palms to awaken the natural oils and release the locked in flavors!

Polar Vortex = Cold Temps = Easy, Delicious Chili!

Are you in a part of the country that was affected by the Polar Vortex? If so, you know how cold it got! Schools across the country closed as well as businesses and government offices! Here in Western New York we had a blizzard! Things are clearing up now and the temperatures have risen, but the effects of the cold are still being felt...water pipes have frozen and burst, cars are still in ditches, etc!

Now is the perfect time to talk about chili. It's a great dish when the weather takes a turn for the worst and you can make just about any sized batch you'd like. You can feed just yourself or an army...whatever the occasion calls for! You can make it as spicy or as mild as you'd like, you can add lots of veggies or lots of beans...it's up to you to make it your own!

Every year, when January rolls around, we try to focus on encouraging a healthy lifestyle by "making your own", which is the purpose of this blog post! We are going to give you an amazing chili recipe that uses our Chili Seasoning Mix!

First, let's learn a little bit about chili...

Did you know...Chile peppers were used in Cervantes's Spain and show up in great ancient cuisines of China, India, Indonesia, Italy, the Caribbean, France, and the Arab states.
Also, Don Juan de Onate entered what is now New Mexico in 1598 and brought with him the green chile pepper. It has grown there for the nearly four hundred years since.


Finally, Canary Islanders, transplanted in San Antonio as early as 1723, used local peppers, wild onions, garlic, and other spices to concoct pungent meat dishes - improvising upon ones they had cooked for generations in their native land, where the chile pepper also grew.

Chili

Ingredients:
1lb. ground beef or turkey (your choice)
1 small white onion, diced
2 cloves garlic, minced
1 small green bell pepper, diced
1 small red bell pepper, diced
1 cup frozen corn
2 - 14.5oz cans of diced tomatoes (if you want your chili extra spicy, get the tomatoes with the chili peppers in them. Or if you are looking for a more smoky flavored chili, get fire roasted diced tomatoes.)
1 small can tomato paste
1 cup beef broth
1 can red kidney beans, rinsed and drained
1 can chili beans
2 teaspoons Worcestershire sauce, divided
Salt and Pepper to taste
2 teaspoons Chili Seasoning Mix, divided

Method:
Add ground beef or turkey along with the onion, garlic and bell peppers to a frying pan or skillet. Add 1 teaspoon of Chili Seasoning Mix along with salt and pepper if desired. Add 1 teaspoon of Worcestershire sauce as well. Crumble and cook meat over medium high heat until no more pink remains. Drain meat and vegetables if necessary.

Add beef mixture to a stock pot. Add corn, tomatoes, beans, broth, tomato paste, remaining chili seasoning mix, remaining Worcestershire sauce. Add salt and pepper to taste if desired. Stir all ingredients and bring to a boil over medium high heat. Once a rapid boil has been reached, lower the heat to simmer, cover the chili and let it cook for at least an hour, stirring occasionally.

Depending upon your serving size, this pot will feed 4 - 6 people.

There are several variations that you can do to make it your own! Don't like green or red bell peppers? Don't add them. Want more corn? Add it! You can add other veggies as well, such as diced zucchini or eggplant. I've known a few people to throw some fresh spinach leaves into their chili! You could even remove the canned, diced tomatoes and use fresh diced tomatoes if you wish. If you prefer a thicker chili, you can omit the beef broth. If you prefer a more soup-like consistency, then you can add more beef broth.

You can garnish however you'd like as well. The most popular garnishes for chili are sour cream and shredded sharp cheddar cheese. You can add diced red onions, chopped fresh cilantro or parsley! It's up to you to make it your own!

It's time for a Scavenger Hunt!

Here at +Make Your Own all this week, we're focusing on kids and keeping them busy and their minds sharp this summer! If you're following us on Facebook then you know what we've shared so far!
